Mix Veg Kofta Curry:  Ingredients Boiled mashed potatoes   2-3 Capsicum     1 Carrot     1 Mushrooms     ½ cup  Green beans     few  Onion     1 Grated cottage cheese   ½ cup  Green chili     1 tbsp Salt      1 tsp Red chili     1 tsp Cumin powder    1 tsp Coriander powder    1 tsp Dry mango powder    1 1/2 tsp Gramflour     2 tbsp  Coriander     2 tbsp Oil      for frying Cashews     3-4  Cumin seeds     1 tsp Coriander seeds    1 tsp Dry red chilies    3 Star anise     1 Black cardamom    1 pod Cinnamon stick    1 Cloves     5  Black peppercorns    10 Oil      2 tbsp Onions     2 Tomatoes    2  Green chili     1 tbsp Salt      1 tsp Chili garlic sauce   1 tbsp Paprika     1 tsp Turmeric     1/2 tsp Butter      2 tbsp Bay leaf     1 All spice powder   1 tsp Cream      ½ cup  Coriander     1 tbsp Cream     for garnishing  Method: Mix boiled mashed potatoes, capsicum, carrots, mushrooms, green beans, onion, grated cottage, green chili, salt, red chili, cumin powder, coriander powder, dry mango powder, gramflour, coriander and mix it well. Take some mixture in your hands shape it into a ball.Heat oil and deep fry these until golden brown and crispy. Drain on absorbent paper and keep aside. Soak cashews in water for 2 hours. Transfer into a blender, add more water and blend it into a paste.  Take a pan, add cumin seeds, coriander seeds, 3 dry red chilies, star anise, black cardamom, cinnamon stick, cloves, black peppercorns and dry roast for few minutes. Remove from heat and grind into a fine powder. Heat 2 tablespoons oil in, add onions and fry till golden. Then, add tomato, green chili, salt, chili garlic sauce, paprika, turmeric and cook until tomato turns soft and pulpy. Cook for 5 - 7 minutes on medium heat. Remove it from heat and allow it to cool. Transfer this into a blender and blend it into a puree. Heat 2 tablespoons butter in a pan, add bay leaf and the blended paste in it and mix. Now add the blended masala, all spice powder and cook few minutes. Add the blended cashew paste, cream and water and bring to a boil. Add 1 tablespoon coriander, fried koftas and mix well. Cook for 8 - 10 minutes on medium heat.Remove it from heat. Garnish with cream.'
