'Foolproof prime rib recipe. Tried this on beef chucks a couple of times before & they turned out successful EVERY time, just that the texture could have been better. So we decided to splurge a little on a 4.7 lbs boneless rib-eye roast this time, at about US$10 per lb. Season meat that\'s returned to room temperature. Cooking time at 500°F = 4.7lbs x 5 min = 23.5 min = 24 min Turn off the oven. Do NOT open the oven door! Rib roast was perfect after sitting in the oven for 2 hours.
