'A bunch of you have been asking me how to keep rice noodles from sticking together, so I decided to quickly share this hack my mom shared with me when she was teaching me how to cook. I also realize that some of you may be wondering how to prevent them from sticking together while you\'re cooking, and the best thing would be to make sure you don\'t overcook them! Overcooking rice noodles means that it releases TONS of starch and then sticks together. As for when you\'re making pad Thai or stir fry, I don\'t have a TON of experience with that. My mom would just make sure there\'s enough sauce so it can sit in between the noodles and they won\'t stick together. Often that would involve extra oil. Vietnamese dishes tend to use rice noodles as a base, they\'re not typically cooked in broth or in soup because they release too much starch into the broth. In Vietnamese cuisine, we tend to cook them separately and sometimes a tiny bit undercooked, so that when we add piping hot soup to the noodles they become perfectly chewy and delicious :) Hope you found this helpful!
