Mix together the ginger, garlic, green chili, turmeric, cumin, lemon juice and some salt, marinate the chicken livers in it. Heat the oil, add the livers. Cook until browned and done. Add the coriander and mint and check the seasoning, adding a squeeze of lemon juice. Put sliced onion tossed with some chopped coriander, mint and lemon juice, on the bottom of the tortilla then place the liver on top and roll. Serve immediately.    Chocolate Cake Traybake:  Ingredients For The Cake: Unsalted butter   250 gm Self-raising flour   175 gm  Cocoa powder   75 gm Caster sugar    250 gm Eggs      4 Vanilla essence   2 tsp Milk     3 tbsp For The Frosting: Unsalted butter   100 gm Milk     3 tbsp  Vanilla essence   2 tsp Cocoa powder   75 gm Icing sugar     200 gm To Decorate: Sugar sprinkles or chocolates  as required  Method: Put all the cake ingredients into a bowl and beat until combined and smooth. Scrape into a greased and lined 9x13” tin. Bake at 180 degrees C for 45-50min or until a skewer inserted into the centre comes out clean. Leave to cool in tin for 10 minutes, then lift on to a wire rack and leave to cool completely.  Meanwhile make the frosting. Heat butter, milk, vanilla and 1tbsp water in a pan over low heat, stirring until butter melts. Sift in cocoa powder and icing sugar, and heat gently, stirring until glossy and smooth. Remove from heat and leave to cool for 30-45min or until thick enough to spread and just hold its shape. Beat frosting briefly so it’s smooth (along with a few drops of boiling water if it’s too thick). Spread over top of cake. Decorate with sugar sprinkles or chocolates. Leave to set for 20min before serving.'
