'Harira is the most popular Moroccan soup during Ramadan in Morocco, eaten along side chebakia and dates. An American cooks Moroccan food in honor of Ramadan Maroc 2021. Harira recipes vary from family to family, but it seems the most common ingredients are celery, tomatoes, fresh herbs, chickpeas, lentils, vermicelli noodles, and onion. The spices used today are tumeric and ginger in addition to our fresh herbs. To make the soup extra hearty, we added rice to the lentils, chickpeas, and noodles. Lamb, beef, or chicken can be used, but we are using turkey for the base of today\'s soup. Harira can also be prepared as a vegetarian or vegan soup. In our kitchen we have no blender or pressure cooker, although there are many recipes that utilize these kitchen appliances.
