'Wow your friends with this fun party trick! Cabbage juice is a natural pH indicator and will change colors as you add ingredients that are either more basic or acidic — so this pretty cocktail changes from blue to pink in front of your eyes. Now, if you\'re worrying about the flavor, don\'t. We\'ve taste tested this one extensively and it tastes simply delicious. So chill a few glasses and get ready for your friends to be amazed. Color-Changing Cocktail From Nicole Iizuka, POPSUGAR Food 1 cup red cabbage, shredded 1/2 cup water 1/4 tsp. baking soda 1 oz. simple syrup 1 oz. vodka 1 oz. peach schnapps Juice of 1/2 lemon Club soda, for topping Lemon peel garnish In a food processor or using an immersion blender, blend together cabbage and water until a red liquid is created. Strain liquid through a mesh strainer into a glass. Add baking soda and stir to turn blue. Add simple syrup and mix to combine. In a glass, add 1/2 oz. of blue liquid. Top with chilled vodka, peach schnapps, and lemon juice and finish with club soda. Garnish with a lemon peel and serve.
