'How to make awesome vegan Indian food! Full mushroom sabji recipe and more info below! Vegan Mushroom Sabji Recipe 4 small cloves of garlic, chopped 1/2 white onion, chopped 1/4 cup crushed tomatoes 1/2 tsp chili powder 2 tsp low sodium soy sauce 2 tsp ketchup 3/4-1 cup sliced mushrooms 1 tsp cornstarch 2 tbsp water 1/2 cup bell peppers salt to taste In a large pan over medium/medium high heat, heat a few tablespoons of water or oil and add garlic and onions. Sauté for 2 minutes. Add tomatoes and cook for another minute. Add chili powder, soy sauce, and ketchup. Stir and add mushrooms. Cook for 1-2 minutes. In a small bowl, mix corn starch and water and stir until dissolved. Add to pan and stir to thicken the sauce. Finish by adding bell peppers and seasoning with salt if needed. Garnish with fresh cilantro and serve warm. TIP: This makes a great side dish or light meal, especially if paired with rice and salad.
