Ingredients: 1 medium cauliflower 1 brown potato 1/2 cup diced cilantro 4 Tbs Olive Oil 4 diced garlic gloves  2 inch piece of finely grated ginger 1/2 large onion diced 1 serano chili chili diced  1/2 cup tomato sauce  1 tsp salt 1 1/2 tsp masala 1 tsp haldi/turmeric  1/2 tsp red chili powder  Method Cut a medium size cauliflower into small ½” to 1 inch pieces.  Rinse and set aside.   Add your 4 table spoons of olive oil to wok pan Add 4 diced garlic gloves and 2 inch piece of ginger. Sautee for 3-4 minuets or until you can smell and deep aroma Add your finely chopped onion. Make sure your onion is diced as much as possible. This will create a smooth paste that we will be the base for out dhurka.  sautee for 4 mins and add 1 diced green chili - sauté for another 5 minute or until the onion is translucent. Another indicator that your onion is done…is when you can see the oil separate from edges of the onion in the pain like this.   Add your 1 tsp of salt sautee for 1 minute Add 1 ½ tsp of masala  Add 1 tst of haldi/turmeric  Add ½ tsp of red chili powder   Cook this down for 1-2 minutes   Then add ½ cup of tomato sauce and continue to sauté for 2-3 minutes.   If you want you can put you potato pieces in the microwave for 5 mins and then add them at the same time as your cauliflower if you are pressed for time or if you don’t like using the microwave you can add your diced potatoes in at this time. Coat your potatoes with the dhurka paste sauce and cover with a lid for 5 mins.   You’ll know your ready for the cauliflower when you can break the potato in ½ with your spoon. This could take anywhere from 10-15 mins. If at the 5 min mark you notice the potato is not getting soft. Put the heat on medium low cover with lid and let the steam do the work.   Once you can break the potato piece in ½ turn the heat up to Medium and add your cauliflower 1 handful at a time coating it with the dhurka.   Gently fold the dhurka that’s settled at the bottom and fold it from the bottom to the top.  If you notice that the thruka is thick like mine and isn’t coating the Cauliflower and ¼ cup of water to thin out the thruka.   Cook with the lid for 10 mins. Allowing the steam to aid in the cooking process. After 10 mins cook for another 10-12 mins without the lid allowing for the water to escape leaving your cauliflower with the perfect texture!   Add ½ cup of cilantro for garnish and serve with roti, naan and yogurt for a healthy high in vitamin C meal.   Enjoy!'
